Ingredients
1 egg white
2 oz. pisco (a grape brandy)
½ oz. freshly squeezed lime juice
¾ oz. Simple Syrup (for recipe)
1 drop of orange-flower water
2 dashes of Angostura bitters
Directions
- Place the egg white into a cocktail shaker with ice (see fortechnique).
- Add the pisco, lime juice, Simple Syrup, and orange-flowerwater to the cocktail shaker.
- Shake vigorously for at least 20 seconds (since the drinkcontains raw egg white, it must be broken up this way), andstrain into a chilled stemmed wineglass.
- Delicately dash bitters on the top before serving.
Notes
- Pisco is technically and unaged brandy obtained from the distillation of recently fermented Peruvian grape musts and juices.
